White chicken chili for dinner tonight… going to make a HUGE pot to get us through the weekend without going shopping.
Made this for dinner — risotto with brocolli, mushrooms, and red onions. Since I wasn’t sure how the roasted red peppers would taste mixed in, I topped it with a mess of them instead. Chris fondly referred to the blob of red peppers as “a crab” (and they were SUPER tasty). I’m not big on creamy risottos that flow all over the plate on their own, hence this one having enough cheese (parmesan & asiago mix) to let it keep a shape. Chris insisted that he wanted ROASTED POTATOES with the risotto, so, I did those too. I don’t think two starches belong on the same plate, but he figures that since they’re both things he likes, he might as well eat them together, I guess :]
And this was gooooood. I so love risotto. It’s total comfort food.

Not that it’s anywhere near as interesting as the American election, but, today is Election Day up here in Canada. Get out there & vote! It’s your civic duty!

EDIT: I realized I should say something positive about my candidate once in awhile rather than always bashing the easy targets. I won’t lie, social issues are the most important to me; I’m fairly fatalistic about the economy and whatnot — I believe those things will work themselves out in time, because they’re widely regarded as too important not to and no one in America wants to be poor. But it’s easier to overlook the “small” things that make a huge difference in people’s lives, and there are too many challenges unique to women that go unrecognized, or circumstances under which women are not regarded as equals to men, which infuriates me. Last week, I bought bananas on special at the grocery store. When we got home, Chris put them on top of the fridge, out of my line of sight (see what I mean about him putting stuff in stupid places?), and I didn’t realize this until two days ago. I tried to eat one of them, but it was just mushy and gross, so I realized that these bananas were born to be made into bread.
So, in preparation for my Thanksgiving baking, I present to you — banana bread (I added dried cranberries and about half a teaspoon of cinnamon to that recipe):

Thanksgiving is October 13th in Canada this year. We’ll be heading to visit family on the 12th. I’ve been debating what dishes I wanted to bring — green bean casserole? yams with marshmallows? But we’re going to see both sides of Chris’ family, and what if I don’t want to make those dishes twice? So I’ve been looking for new recipes that really hit the spot.
Today, Alanna over at A Veggie Venture (which is a phenomenal resource when you see veggies on sale but just don’t know what you’d do with them if you bought them) posted a recipe for One Skillet Cauliflower with Cheese Sauce that I will definitely be bringing to one of the family dinners, along with the aforementioned yams. To the other, I’ll bring green bean casserole and Spiced Honey Cake with Carmelized Apples from Baking and Books. I’m terrified of making this cake. Seriously. Baking scares me, but I’ll do it.
I can’t wait for Thanksgiving… oh dear lord… all that food!
