at least fried eggplant makes sense. it sounds like something one could dine on for either lunch OR dinner OR both. when i was pregnant with my second daughter all i wanted to eat was jazz apples and chocolate pudding. sometimes even together. i'd eat that all day long until i was either feeling sick or i ran out of whipped cream. i was convinced she'd be born with cavities or gum disease. luckily for me all she had was a sweet tooth. well, 6 sweet teeth (so far, anyway)...

That recipe is actually wayyyy more complicated than what I do... I just coat the slices in egg wash, dip into a cormeal coating, and pan fry w/canola oil. Turns out just fine :] I linked the recipe cause it had a picture, and the picture I took of mine was really ugly and unappealing, hehehe.

I love fried eggplant! However, Rick's seems to always come out too salty. I will have to ask him if he rinses the slices off after he lets them soak. I think he was under the impression that you soaked in salted water to remove some of the liquid from the eggplant, not to remove bitterness. Thanks!
